Young Chicory leaves can be eaten fresh in salads and older which have a more bitter flavour can be cooked as a vegetable. Sow in the open ground in May after danger of frost in the spring, approx 15 cm apart. Harvest the roots in the autumn before hard freezing occurs. To produce chicons cut off the foliage about 2 cm from the top. Replant the roots upright in moist sand and force them to grow a new head. Cover them with mould and straw.
