Evergreen plants do not drop their leaves in winter, they stay green (or red) year-round. This group contains conifers, camellias, rhododendrons, prunus, and many others. 

Evergreens are much more dominant in your garden in winter, when other plants are bare and there is not much colour in your garden. Keep this into account when planting them. Some of the conifers and shrubs are ideal for hedges, they will provide privacy and windbreak all year.

Evergreen plants  also provide shelter for animals against the cold.

Besides conifers evergreen shrubs and plants do shed their leaves over time  but it's often the new leaves in spring that push out the old leaves. 

Some plants are semi evergreen like ligustrum, they usually keep their leaves over winter, but with sever frost they might drop the, however they will grow back quickly in spring.

The leaves of evergreen plants are very durable and thick, therefore they do not decay that quickly, you better sweep them up. Usually evergreen plants flower less spectacular (or not at all) compared to deciduous plants, but they do form the backbone of your garden
